Nasturtiums</span></h3>

<span style="font-size: large;">Nasturtiums are planted in several of my garden beds. Not only are they beneficial, pretty, and easy to grow, they are also edible. They are really good at attracting good bugs. Nasturtiums also repel potato bugs, squash bugs, striped pumpkin beetles, Mexican bean beetles, and aphids. I grow them in my greenhouse because they are suppose to destroy whiteflies. For those of you who have orchards they will help control the woolly aphid, if left to wander.</span></div>

Sunflowers </span></h3>

<span style="font-size: large;">Sunflower come in a wide range of colors and sizes. I have planted many different ones in the past. I like to try new verities each year. One year I planted the mammoth sunflower, it was over 6 feet tall and the flower head was HUGE. Unfortunately they get so heavy they fall over even staked up. Now why do I plant sunflowers? Well one my honey bees love them, so do other pollinators and good bugs like lady bugs. Ants also like to herd aphids onto them, keeping aphids off neighboring plants. Sunflowers also giving shade to plants, like cucumbers, that need it during the hottest part of the day. Before modern Europeans arrived in the US, sunflowers were grown as a companion for corn, it supposedly increases corn production. I planted a row of sunflowers between my corn rows to try this theory out. </span></div>

<span style="font-size: large;">Marigolds are said to produce a pesticidal chemical from its roots. Because of this they repel bean beetles, aphids, potato bugs, squash bugs, nematodes, and maggots. They can also stimulate vegetable growth.</span></div>

<span style="font-size: large;">Every year I garden I have a <strike>huge</strike> horrible problem with cabbage worms (they're really caterpillars). It seemed like a never ending battle. It starts with trying to catch the white cabbage <strike>moth</strike> butterfly ( yes it is a butterfly). Then checking every cauliflower, cabbage, broccoli, brussel sprout and kale plant leaf for teeny tiny white eggs or cabbage worms. Those cabbage worms are REALLY good at hide and seek. It would take hours every other day to do this. </span></div>

<span style="font-size: large;">This year I wanted to be proactive and keep the cabbage butterflies away from my plants. I came up with window screen. It keeps flies and bugs out of your house, why not away from my plants. </span></div>

<span style="font-size: large;">Now I didn't want to spend hundreds of dollar on this project. I also wanted it to be easy enough for me to do by myself. I went to Walmart and Home Depot looking at screen rolls and pvc pipe. Everything was either to expensive or not quiet what I wanted. I thought what I need is just some old window screens. The light bulb went on. We have a reuse it store just down the road from where we live. So tape measure in hand, off I went. For $15.00 I was able to build my hillbilly screened in garden bed. </span></div>

<span style="font-size: large;">I used oak stripes we had laying around to hold the screens in place. If one screen was a little taller, I just wiggle it down a little farther in the soil. I should mention that I went over every square inch of each leaf to make sure there was no eggs or bad bugs. So far so good.</span><br />

I got my first large harvest of honey from my bees last fall. So I wanted to try using honey instead of sugar in a batch of strawberry jam. I wasn't quite sure if we would like the honey jam, so I also did one batch with sugar.</div>

<span style="font-size: large;">I used<a href="http://amzn.to/1Sd2McG"> Ball Lower Sugar Jam</a> jar of pectin. With this pectin you can use less sugar, honey, or other sweeteners. The jar makes up to 22 half pints, but it says do not exceed 10 jars per batch. </span></div>

<span style="font-size: large;">6 cups cut up strawberries</span></div>
<div>
<span style="font-size: large;">1 1/2 cups water</span></div>

<span style="font-size: large;">6 Tblsp + 2 1/4 teasp pectin</span></div>
<div>
<span style="font-size: large;">1 1/2 cups honey</span></div>

<div>
<span style="font-size: large;">1. On the pectin's instruction it say to crush one layer of strawberries at a time using a potato masher. I like to cut the strawberries into fourths and mash them a little altogether. This makes for a chunkier jam.</span></div>

<span style="font-size: large;">2. Combine strawberries with water in a large saucepan. Gradually stir in pectin. Bring mixture to a full rolling boil that cannot be stirred down, over high heat, stirring constantly.</span></div>

<span style="font-size: large;">3. Add honey. Return mixture to a full rolling boil. Boil hard 1 min. stirring constantly. Remove from heat. Skim foam.</span></div>

<span style="font-size: large;">4. Ladle hot jam into hot sterilized jars, leaving 1/4 inch headspace. Wipe rims, top with warmed lids, and apply bands, fingertip tighten.</span></div>

<span style="font-size: large;">5. Place filled jars in canner ensuring jars are covered by 1 to 2 inches of water. Place lid on canner. Bring water to gentle, steady boil. (200 degree F) </span></div>

<span style="font-size: large;">6. Process jars for 10 minutes. (adjust for altitude, mine is below 1,000 feet) Turn off heat, remove lid and let jars stand for 5 minutes.</span></div>

<span style="font-size: large;">7. Remove jars and cool. Check lids for seal after 24 hours.</span></div>

<span style="font-size: large;">The consensus with the family is the honey jam is better than sugar jam. The honey jam is a little sweeter and has a slight honey taste. I also used a 1/2 cup less of honey than sugar.</span></div>

I haven't been spending much time out in my garden. Every couple of days I would go out to make sure the outside tomatoes were covered and check the greenhouse plants. So today with the sun shining and blue sky showing, I spent a little time checking on my garden. I was pleasantly surprised to see most of the garden was doing very good.</span><br />

<span style="font-size: large;">I had never grown this type of cabbage before. I bought these two plants at my local farm and garden store. They were on the half price rack. This cabbage grew very well, but because of its wrinkly leaves, it is impossible to keep the aphids off of it. These two heads are kind of small but I have decided to harvest them anyway. I don't think I will grow them again next year.</span></div>

<span style="font-size: large;">This deck box gets too hot. The arugula barely grew and it is already bolting. See the flowers and what you can't see is the pak choi. They are struggling to grow. The kale is doing okay. Next year I will grow heat loving herbs there. I may pull them out and do that now.</span></div>

<span style="font-size: large;">We all know it eats flies, mosquitoes, and other insects that eat my plants or me. But did you know these big ones eat slugs and snails too! </span><br />
<span style="font-size: large;">This toad was under a empty garbage can I no longer needed near my garden area. When I picked up the can to put it back where it belonged, there sat the toad. I could tell that it had made its home under the garbage can. Since I know how helpful this toad is, I carefully put the garbage can back how it was. (Of course after I took a picture first.) So in some of my garden pictures you may see an out of place garbage can near my potted potatoes, well that is Mr. Toads home.</span><br />

Not only were they buy one get one free, they were also 50% off. So he bought A LOT. This made me happy because we had run out of canned chicken. </span></div>

<span style="font-family: "verdana" , sans-serif; font-size: large;">First thing I did was put the chicken in the freezer. This makes it easier to cut up. Next I got 3doz. <a href="http://amzn.to/28hGbay">wide mouth pint jars</a> out and put them in the dish washer to sterilize. Last was the task of checking my pressure canner out. I have not used it this season so I did a practice run of bring it up to pressure. I do this to make sure of course it comes up to pressure, but also to make sure there isn't any big leaks around the seals. Canner checked out, now to the daunting task of cutting up all that chicken.</span></div>

<span style="font-family: "verdana" , sans-serif; font-size: large;">5. Put warm water in the canner per manufactures instructions. For raw packed foods, the water should only be about 140 degrees F.</span><br />

<span style="font-family: "verdana" , sans-serif; font-size: large;">6. Process times <u>pints 75 minutes</u> and <u>quarts 90 minutes</u> at 10 lbs. of pressure.</span><br />

I just start adding until I think it looks good. I don't always add the same ingredients, either. In this batch I have basil, garlic, toasted almonds, shredded parmesan cheese, salt, and olive oil. Then I put a lid on and put it in the freezer. These 4oz. jars make the perfect serving size.</span><br />

<span style="font-size: large;">This is my main garden, my husband build me raised beds this year. So far I find it away easier to plant, weed, and water my garden. In the first bed I have planted tomatillos, butternut squash, carrots, and pie pumpkins. The bed behind that is zucchini, radishes, carrots, and turnip. Next bed over is bush beans, sweet corn, pop corn and sunflowers down the middle. Behind that one is pickling cucumbers, slicing cucumbers, two cabbage plants, and bush beans at the end. </span></div>

In the past years I have knock down the paper wasp nest and discouraged them from building in my greenhouse. That was until read how helpful they are to have in your greenhouse. Did you know? Wasps eat flies, aphids, caterpillars and other insects that pray on our gardens. This year I have not seen a single aphid or white fly on my plants. Since I have honey bees and I'm use to bees flying around me, I will let them stay.</div>

So needless to say I found empty canning jars in all kinds of strange places.</span></div>

I have pretty much every size Mason Jars come in. Because I have never count my jars, I was very shocked when I add them all up. Empty jars 329. Filled jars 255. <span style="background-color: cyan;">That's a total of 584 jars!</span> </span></div>

This weekend my grandpa bought a box full of Strawberry from a road side stand. We ate our fill of fresh Strawberries and I made Strawberry Jam with the rest. I like to use <a href="http://amzn.to/1WtOpZ4">Mrs. Wages Lite Fruit Pectin</a> because I'm able to decide how much sugar I want to add. I use less sugar because then I'm to be able to taste the strawberries in my jam, not just sugar with a little strawberry flavor.<br />

Less Sugar Strawberry Jam</h3>
<br />
5 cups Strawberries, washed, stemmed, and diced<br />
1 1/2 cups Sugar<br />
1 box Mrs. Wages Lite Fruit Pectin<br />
<br />
1. Prepare home canning jars and lids according to manufacturer's instructions for sterilized jars. I put mine in the dishwasher. Make if you use the dishwasher, that the heat is on to dry. This will keep the jar warm.<br />
<br />
2. Put measured fruit into a 6 or 8 quart saucepan.<br />
<br />
3. Mash strawberries with a potato masher until they are very mashed and there is lots of juice. If your strawberries are too firm and don't release much juice add a 1/4 cup of water.<br />
<br />
4. Stir in pectin and LET MIXTURE SIT 5-10 MINUTES. I set the timer for 10 mins. and got my sugar, lids and rings ready.<br />

5. Then bring to a full boil over high heat, stirring constantly. Remember a full boil is when you stir the jam it stay at a full boil.<br />
<br />
6. Add sugar. Return to a full boil and boil for 1 minute, stirring constantly. <b>Don't overcook pectin as it may break down and prevent gelling.</b><br />
<b><br /></b>
7. Remove from heat (if using gas stove that means just turn off burner). Then skim off foam. Save foam for later to eat when cooled, Yum.<br />
<br />
8. Quickly ladle into hot jars. Leave 1/4-inch head space. Use a clean damp cloth to wipe the top and threads of jars. Cover with hot lids and tighten rings firmly.<br />
<br />
9. Set hot jars on rack in canner of boiling water. Water must cover jars by 1 or 2 inches. Cover canner and return to boil. (200dF) Boil for 5 mins. Begin time when water temp. reaches 200d.<br />
<br />
10.Remove canner form heat,(again gas stove turn off burner) remove lid and let jars sit 5 minutes in canner. Remove jars from canner, set on a cutting board covered by a clean towel.<br />
<br />
11. Listen for the POP as the jars seal. If a jar doesn't seal eat that one first.<br />

Texas to Colorado</span><br />

pretty warm when we got up a 6:30 this morning. We were only a few miles from
the Oklahoma boarder. We decided to take Hwy 177 which paralleled I-35, we did
this so we wouldn’t have to go through Oklahoma City. We made the right choice.
Oklahoma country side is beautiful and we see saw some really neat old towns.
Then we crossed over into Kansas and everything went to hell. First off, it was
soooo hot, 109, it felt like we were in hell. Second Kansas is miles and miles
on nothing special. <span style="mso-spacerun: yes;"> </span>Third we drove into
a MASSIVE storm. The radio was giving storm updates saying flash floods and
ping pong size hail. We could see LOTS of lightning and really black clouds.
Then the radio said between Colby and Goodland, which was where we were headed,
there was flash flooding and 60 mile hour winds. We decided to pull off in
Colby have dinner and wait out the storm. We waited about an hour and it looked
like the direction we were headed was clear of dark clouds and lightning. The
storm was still raging beside us as we drove. I had never seen lightning that
was nonstop flashing with no thunder. We thought we were doing good driving toward
bright nonthreating clouds. Then….. our road turned and we drove straight into
the storm! There were lightning bolts striking all around us, rain coming down
so hard our wipers could hardly keep up, and wind blowing so hard cars were
pulling off the road everywhere. We even saw a big construction sign that have
the lit arrow flipped upside down. When it got really bad we pulled over near
an overpass for a few minutes.<span style="mso-spacerun: yes;"> </span>Then we
continued on, once we drove out of the storm, we decided we had enough of
Kansas. We drove until we came to the first truck stop in Burlington,
Colorado.<span style="mso-spacerun: yes;"> </span>I have no desire to ever go
back to Kansas! Next stop Rock Springs, Wy.</span> </span></span></div>

We were all so happy to have weather in the 80's. It even cooled down this evening to 60 something. It felt really good. We stayed at a KOA in Rock Springs, Wy. Not a very good place and their internet wouldn't work most of the time. </o:p></span></span></div>

<span style="font-size: large;">Wow Florida is a long state. It took us for ever to get out of it. I was so happy when we crossed over into Alabama that I yelled "we're in Alabama!" which started Hunter awake, oops :) The neat part about driving through Alabama was going under Mobile. Yes I said under, we drove in a tunnel that goes under part of Mobile. I also saw an alligator swimming in Mobile Bay. It didn't take us long to get through Alabama and Mississippi. We saw a sign in Mississippi that said it was 100 degrees, it was 6:45 at night! We stayed at Fontainebleau State Park in Louisiana. The park is on Lake Pontchartrain and across the way we could see New Orleans.</span><br />

<span style="font-size: large;">Louisiana to Eisenhower State Park, TX</span><br />
<span style="font-size: large;">At 6:00 this morning it was already 80 degrees. I wouldn't mind coming back to Louisiana but I think winter would be a better time to go. Louisiana and the Northeast part of Texas is pretty not what I expected. Especially Texas it was green with many trees. Oh it was hot! We stayed at Eisenhower State Park. The main road to the park was closed because it was washed out during thee floods a few months ago. So we had to take Lil Old Road, which was a little old road. The park was huge ,190 site, but there was probably only a dozen people there. I think it was because of the flooding the boat launch, fishing area, and yacht club were all closed. We found a nice site with power, air conditioning was a must.</span><br />

<span style="font-size: large;">The drive down was pretty good until we got almost to the Keys and then it was stop and go until Key Largo. We were able to check in early to our campsite. It was after noon so we ate some lunch, then change into our swim suits, grab our snorkeling gear and we were off. The first place we went snorkeling it took us a little while to find the fish. Hunter and Bailey did great swimming. It took Bailey a little while to get use to breathing through her mouth only but she figured it out. We snorkeled for an hour or so then went back to camp to look at the map to find the other swimming/snorkeling area. Then we were off again for several more hours. We all had a great time. The park closes to the general public around 8:30 pm so we decided to go for a walk and take pictures. It was so peaceful and quiet. Wow what a great day.</span></div>

<span style="font-size: large;">This is one of the places we snorkeled at, it had the most fish. The fish weren't as colorful as Hawaii or St. Thomas but they were still neat to see and watch. There were huge jelly fish you had to watch out for, if you disturbed them in any way they would release something in the water, which made your skin itch and burn. </span><br />

<span style="font-size: large;">We made great time driving the rest of the way through North Carolina, then through South Carolina, Georgia and into Florida.</span><br />
<span style="font-size: large;">This is where the troubles started. We decided to take Hwy 27 south through the middle of Florida, because it was Friday and getting close to rush hour, we didn't want to go through any major cities. Well when we figured out Hwy 27 was not the way to go because of all the stop lights, it was too late to get onto I-75. On the radio we heard there were several accidents, we figured either way was not good. So it took us a REALLY long time to get to Grandma Hays' house. </span><br />

<span style="font-size: large;">On a good note we did try something new. We had see several signs for boiled peanuts. We all thought that sound interesting, so at one of the gas stations I bought some. They are interesting. The peanut are boiled in the shells in salt water. The shell are wet and hot. When open a little salt water comes out. The peanut are soft and have the texture of a pinto bean but, they taste like a mild peanut. We're not sure if we like them, we'll just have to keep trying them:)</span><br />

<span style="font-size: large;">Today is going to be a relax day. Grandma took us out for a great breakfast. Then we went to Ronna and Jim's for a visit. Back at Grandma's Hunter relaxed and did some computer stuff for Grandma. Eric fixed a few things around the house and bus. Bailey played on her computer and finished a puzzle with Grandma. I cleaned the bus, washed clothes and blogged. It was a great day to recuperate. </span><br />

<span style="font-size: large;">Kings Dominion has two sections a regular amusement park with lots of roller coasters and a water park called Soak City. We went to Soak City first, we had so much fun going down the water slides and floating in tubes around the lazy river pool. After Soak City we went back to camp to have snacks and rest a little. Then we headed back to the park so Hunter and Bailey could ride some roller coasters.</span><br />

Hunter was able to hold on for 53 seconds. The lady working it said that was the longest she had seen today.</span><br />

<span style="font-size: large;">After that we drove and drove, I didn't think we would ever get out of South Dakota. We were on the road for about 14 hours and finally stop at a rest area near Missouri Valley, Iowa. Hunter and Bailey were so excited when we saw fireflies in the trees. We decided to sleep there for the night.</span><br />

<span style="font-size: large;">Eric and I woke up about 3:00am to thunder and lightning. A few of the booms were right above us and shook the bus. Hunter and Bailey slept right through it all. Today was a long day of driving. We drove down the west side of Iowa, into Missouri. When we got to Kanas City we headed west all the way across Missouri and through the lower part of Illinois. We finally stop about way through Indiana at a truck stop, to sleep. Our generator worked GREAT, it ran all night long with our air conditioner and frig going.</span><br />

As we drove the rest of the way through Indiana and into Kentucky we hit a massive thunder, lightning and heavy rain storm. Bailey again slept through it all. Traffic wasn't bad until we got to Fredericksburg, VA. It was a lot of stop and go, cars weaving in and out but we finally made it to our campground. </span><br />

<span style="font-size: large;">We were lazy today. The kids and I didn't get out of bed until about 9:30. We were awake but we laid in bed watching tv. It started to rain then it poured and poured. Hunter helped me put up our screened cover and some tarps over the picnic table. Then I was able to cook breakfast. Then we head off to King Gorge to meet family of Eric's (Sandy and Tommy Berry and Kids). They were all very nice people. We stayed with them all day and then they took us out to dinner. We got back to camp about 10:00pm.</span><br />

It wasn't a very warm day today. When we stopped for lunch we could hear thunder booming in the distances. We made a couple more stops along Hwy 14. Once we exited Yellowstone it became Shoshone National Forest. The area is very pretty, with lots of forest service campgrounds off the highway.<br />

When we got to the Bighorn Mountains we started out at about 4800 ft. elevation. When we reached the top we were at 9330, that was a huge climb for the little bus.<br />
That night we stayed at a forest service campground Sibley Lake, about 21 west of Dayton, Wy.<br />

It was raining hard when we got there and continued to rain for at least and hour. Hunter rigged a tarp over the picnic table so I could cook dinner. Tomorrow we head for Custer, SD.<br />
